Can I fix my rabbit stew?

I cooked a rabbit in cider casserole last night. Half heartedy followed a delia recipe that ended with 1hr slow simmering on the hob. Anyway after 1hr 20mins we tucked in but the meat was rubbery and chewy. Didnt fall off the bone like rabbit usually does?! I imagined a lovely slow cooked tender stew when I bought it :( anyway there is more than half left that is for kids and y tea tonight, can I rescue it? Will further cooking do more harm than good?

And on a side note, can I give to 7mo DS? There is a can of cider in it.
