Butternut squash... vegetarian

I know that there was a bnsquash and pork thread a while ago but we're mostly vegetarian. Anyone have a good recipe for bnsqsh?? NOT soup please! And NOT pie either!

just roast it for 20 mins at 220, drizzled with olive oil and salt/pepper then add it to a risotto or pasta?

don't tell me off but I actually made a bns soup today and it was FAB - roast it, then zapped it with a sweated onion, chopped apple and veg stock. kids LOVED it, so scrummy.

It's nice in curries. I like it in cakes (sweet). Oh, and there was a lovely rosti recipe someone posted on one of my threads, look here .

Oh, or cube + roast with spices, then add to a mix of millet and sundried tomato sauce. That worked well.

I keep meaning to grate it and put it in a stir-fry ...

I've never really seen the attraction except for soup and baby food!
I found a recipe for BNS risotto the other day that I'd obviously tried and scribbled next to it was written "doesn't need the squash..."

Jamie Oliver has a good recipe for spicy roasted butternut squash.. lovely as a snack/side! DP loves it.

Have a recipe on the calendar in front of me for pumpkin(or butternut squash) tagliatelle with goats cheese and sage butter and it looks yummy!
1lb 12oz squash cut in 2cm cubes
2tbls olive oil
10oz pasta
3oz butter
4tbls chopped fresh sage
1oz pine nuts
6oz crumbly goats cheese eg capricorn

Roast squash 200 c for 30 mins in olive oli season well
cook pasta saving a cupfull of water, drain return to pan with the saved water.
Stir squash into pasta
mlet butter in fry pan add pinenuts and sage and cook till starting to brown and crisp.
Pour onto pasta and crumble in cheese and serve!

Picture looks yummy!

Oh, I have a Moroccan recipe that involves roasting, mashing and adding harissa. Then putting eggs on top. In theory it's a salad, but we use it as a dip, without the eggs.

roast it with red onions, carrots and sweet potatoes with some rosemary and olive oil

then it's nice on it's own for you, also makes good pasta sauce whizzed up with creme fraiche for't little ones

Its delicious in curry - a tomatoey based one, with spinach too. I can't post a recipe I'm afraid as its DPs speciality and he doesn't really follow a recipe, just makes it up as he goes along

I make a sauce with onions, red lentils, mushrooms and butternut squash, and have it with rice / quinoa. You can make it spicy with garam masala etc or just add some decent stock / soy sauce and enjoy the earthy flavours.

I know you said no soup - but other people might enjoy butternut squash and ginger soup. It's v tasty!
