cauliflower cheese recipe please.

Also..... if the cauliflower is very green and not white at all (came with my veg bag today), should I

a)wait for it to ripen/turn white?
b)say sod it and cook it anyway?
c)ah who really cares anyway?

Cualiflower is foul. Not even adding a cheese sauce, grating cheese on the top and griling it will make it edible.
