Need inspiration for nice veggie main course....

Have invited my colleagues (will be c. 8-10 people including partners) to dinner on Friday night and had forgotten that one is a vegetarian. I don't want to make her feel like a problem, so was planning on doing a totally veggie meal (rather than having meat for everyone else and a solitary veggie alternative for her). However, I am now a bit stuck for a nice and not too complicated main course. I do eat meat but often eat veggie food, but my veggie meals are more everyday than 'party food' iykwim (risotto, veggie lasagne, that kind of thing...). I'd like it to be a bit more special than that. But what? Was planning on making a starter of aubergine rolled around mozzarella and baked in the oven in a tomato sauce (sort of a variation on melanzane alla parmigiana) which is a bit of a fave in our house, with tiramisu for dessert. Any good suggestions? Oh, and I am a bit crap at making pastry, so 'tarty' things not a great idea... Inspire me, please!

your starter sounds delicious, but i was going to say that if i have a mix of veggie/vegan/carnivorous types coming round i tend to make a lamb curry, a lentil dahl and a veggie curry and i buy the starters(pakora etc) and breads from the local indian restaurant as they are infinitely better at the fiddly bits than i am.
people like a curry, it's very sociable, and if you make Madhur Jaffrey's lamb rogan josh (google for recipe)you will impress the socks off them i promise. plus you can get it all done in advance, which is useful.
for dessert, something fruity and cool. although your tiramisu sounds good too.

i like my carbs and veggies often get roast veg/stuffed peepers/risotto - i would love a nut roast or quiche maybe vegetarians like more than just veg!!! hth

I might save the cheese for main course.
I often do pasta with sauteed courgettes,with chilli,lemon,garlic and flat leaf parsley.
At last minute,crumble over some fetta and walnuts.
Lots of white wine and a green salad.
Fabulous.

Very nice sauteed mushrooms for starters???
