Easy recipe for parkin please ...

I know its a little late in the day, but does anybody have an easy parkin recipe please?

Looked all over for it in Asda today, but couldn't find any, and was quite disappointed as I quite fancied some with a naice brew Sad

So anyway....an easy recipe will be very much appreciated, MTIA xx

I have my very old recipe for gingerbread - makes lots, but soon gets snaffled up
100 gm margarine
225 gm golden syrup
150 ml milk
2 eggs
225 gm plain flour
50 gm caster sugar
1 rounded teaspoon bicarb of soda
3 rounded teaspoons ground ginger

grease and line 7" square cake tin
warm margarine and syrup together in a pan until the margarine melts then add the milk
sieve all the dry ingredients into a big bowl
Beat eggs and add to liquid in pan, then pour into the dry ingredients. Beat until smooth and pour into tin
bake at 150 gas mark 2 for 1hr 15 - 1hr 30
Enjoy !

swap out half the flour for pinhead oat meal. NOT porridge oats.

also, same for gingerbread, make it before hand and let it sit in a sealed container to get sticky.

probably- but mines a gingerbread recipe, not parkin so probably a bit different! :)

I might make this Gingerbread tomorrow...and another batch with oatmeal to see

it's one of the nicest gingerbread recipes.

Ah, yes, black treacle, knew there was something different. Might swap the golden syrup, or do 50-50..Grin

I started a thread the other day asking for a good sticky dark parkin recipe and got no takers.

However my friend has sent me her Mum's parkin recipe which is as follows:

4oz marg / butter / lard (I'll probably use butter)
4oz golden syrup
4oz black treacle
4oz sugar - can be white, light brown or muscovado, or a combination (I will probably do a light brown and muscovado combo)
8oz plain flour
8oz medium oatmeal
pinch salt
4 teaspn ground ginger
2 teaspn ground cinnamon
1 teaspn bi-carb of soda
1 egg

Heat oven to 150 C
Melt marg in a pan and add syrup, black treacle and sugar and warm over a low heat until the sugar is dissolved.
Sieve the dry ingredients into a bowl, make a well in the centre and add the syrup mixture and the beaten add. Mix well. If you feel the mixture is a little stiff add a little milk.
Pour the mixture into a greased tin, it should be about 1inch deep. Bake for 1hr.

This recipe sounds pretty authentic for a dark sticky type. I'm going to give it a go tomorrow.

Well, to update, I bought some. From Morrisons on offer that Tyne mentioned. Enjoyed with a cup of tea Smile

So much for making it, but I might do some over the xmas period.
