Help! How far ahead can DD bake cakes for a party this weekend?

DD is 12, she's pretty competent in the kitchen but needs overseeing. She's making a cupcake tower for DM's birthday at the weekend but I am working Thursday and Friday which would have been the ideal time to make the cakes - I don't trust DH to supervise this! We have to leave early on Saturday and she is out doing Halloween stuff on Friday night.

If we baked the cakes lateish on Wednesday, cooled them completely and stored them in an airtight container then iced them Thursday night and kept them somewhere cool would they be OK for Saturday?

She has been practising this for weeks and I don't want it to go wrong for her but the timing is a bloody nightmare!

Yes. This is, in fact, exactly what professionals do, get all the elements ready in advance, put it together as needed.

The cake will ice better after waiting a day and way, less delicate than a very fresh cake.

If you are making frosting, do that today. It will hold in the fridge all week. Put a reminder on your phone to take it out of the fridge in advance of needing it.
