I have been using a James Martin recipe which tastes lovely but the biscuits spread into shapeless blobs every time, despite chilling before baking and reheating oven. Have tried versions with cornflour but don't like the flavour or texture as much. Has anyone got a good recipe where the biscuits look as good as they taste?

Have a nice Rachel Allen one - will pop back later with it

6oz flour
4oz butter
2oz caster sugar

Bake 160 c, keep an eye on them and make sure the oven is not too hot. You can split the flour amount with cornflour but personally I don't bother!

You can also replace an ounce of the flour with ground rice, and this gives the biscuit extra crunch. I suppose you could also use fine semolina, too.
