help ideas needed for a stuffing

mil is staying next weekend and she is bringing a trout with her as it is too big just for her.
now I want to bake it in foil but put something in the middle.
she is 80 and not keen on herbs and spices I was thinking along the lines of onion/pepper tomotoes any ideas

just found this one - not sure I like the idea of sausagemeat inside so I'd probably leave that out - but at least it's not "spicy"

STUFFED TROUT

Seasonings:

Pepper
garlic powder
seasoned salt
parsley
sweet basil

STUFFING:

1 box UNCLE BEN'S® long grain and wild rice mix
1/2 lb. breakfast sausage
1 med. green pepper
1 med. onion
2 plum tomatoes
1/3 lb. mushrooms

Prepare rice mix according to package directions.
In a large skillet, cook the breakfast sausage until browned through, cutting it into small pieces with spatula as sausage cooks. Remove sausage.

Dice the vegetables. Add the onion, green pepper and mushrooms to the remaining grease, cooking until onions turn clear. Drain grease, add the rice and tomatoes. Stir.

Rub the trout inside and out with the seasonings. Stuff the trout with the rice and vegetable mixture. Cook in a preheated 325 F. oven about 35-40 minutes or until trout separates easily from bone with a fork.

Alternatively how about toasting some almonds and mixing those in with some small cherry tomatoes and parsley and bunging that inside ?
