I usually shove it in the oven and not much else. Can you tell me what else I could do? ta.

You could section it up and casserole it or pot-roast it whole. There are some nice Indian-style recipes where you give the chicken a spicy yoghurt coating and slow bake it that way.

You could stick it in an oven bag for extra juicy. Or take it out around 10 minutes before the end of cooking, take the skin off, slather in honey and stick it back in.

I either stuff with lemon segments and put tarragon on it, raised up on some pieces of onion, or stuff with chunks of onion and garlic cloves, and rub with salt and sage.

Either way I put carrots potatoes and other veg in underneath and around to roast, so by the time the chicken is done there's a whole meal.

Cook baby pearl potatoes under it for the last 45 mins. Is my specialty and I'm going to have it tonight now Smile
