Home alone this weekend - meal ideas please.

I've got a rare weekend at home by myself and I am all out of ideas of what to cook myself.

I will probably have a take away on saturday night, but need to cook the other 3 nights and will probably have a friend over for supper on Sunday (I was debating whether to make a chicken laksa for this).

I'm a reasonably good cook and can go and buy almost anything, if I don't already have it.

Is money an issue?
Personally when Im on my own, my thought process is to eat things that others I cook for are not keen on/don't like, however my actions mostly are I can be bothered to cook something just for me.

Take away one night, yummy picky things another - cheese / bread / meat (my husband wouldn't consider this a meal...), go out with the the friend on the other. I love cooking but I really love not having too as well!

Thanks, bread, cheese and picky things is a very good idea. That would make a good Friday night supper.

Money isn't really an issue, but I do really enjoy cooking. Especially when I get to cook for someone who appreciates it and won't prod anything that resembles a vegetable with suspicion.

A tuna steak in a ciabatta bun with salad ( thats my go to as DH doesn't like Tuna or burgers!)

If I had four nights on my own, I would have:

  • a huge Greek salad (no tomatoes) with pitta bread and tsatziki
  • omelette with roasted asparagus
  • mattar paneer, chutney, paratha if homemade, or something with paneer from the takeaway, with dhal, salad and paratha
  • bread and cheese picky meal, with grapes, celery, Garners pickled cabbage etc

In fact, I'd probably be happy rotating those four meals forever. :)

I can never be bothered to cook for one so I have easy things like:

Pasta with sundried tomatoes, sliced kabanos, artichokes and broccoli sprinkled with Parmesan (just eaten)
2 boiled eggs and toast
Baked potato cheese. & corn on cob
Whatever is in the fridge that needs using up.

These are all great ideas. I think I might make picky bits for dinner tomorrow night, cheese, crackers, olives, chorizo and whatever else takes my fancy in the supermarket.
Saturday night will be indian takeaway (or possibly Thai if I can be bothered to drive to get it).
Sunday - sausage sandwiches for brunch and chicken laksa for supper.
Monday - maybe a cottage pie if I get time on Sunday to make it.

Just got the rest of the week's meals to think of now.

I always have seafood when DH is away - he's allergic but I love it.

Baked cheese AND butter? Controversial.

I'd def do the picky food - cheese, fancy sourdough, pickles, salad.

I'd also be tempted by a really nourishing miso soup or something really hot and spicy that the kids wouldn't eat.

I'd have some fish, maybe turbot or skate, with a simple veg such as asparagus.
Then fillet steak another night, with salad.
Some interesting cheese, and some tasty bread.

For lunches I'd have easy things like tomato stuffed with prawn cocktail, avocado vinaigrette, melon and Parma ham.

When DH is away I make myself a spicy fish pizza - dough rolled thin, with garlicky tomato sauce, tinned tuna, anchovies, capers, black wrinkly olives, red onion and chilli flakes. Or, if I can't be bothered, eggs on toast and an early night.

Warm crusty bread,lurpak then dipped in hot Camembert then wee jalepenos on top. Food of gods
