Can I freeze baked / jacket potatoes?

I seem to have lots of spuds this week. I'm doing a casserole for dinner tonight so we can have baked potatoes with it. If I bake extra will they freeze ok? Also any tips you have for baking would be much appreciated too. I normally prick them all over with a fork and then wrap them in tinfoil with salt in. But is there a better mumsnetty way I wonder Smile

I don't see why not as they sell pre-roasted jackets now in the freezer aisle. I do my jackets for 1.5 hours at 180c, pricked and olive oiled. I place them on a piece of foil but don't wrap them.

I prick, oil and salt the skins and bung the potatoes in the oven at 180c for an hour and a half. I alway do one or two extra, wrap.in foil when cool and freeze for DH to take to work for 'lunch'. He microwave reheats them from frozen...
