I've made lamb chilli before, it was fab but really, not chilli. Was more like moussaka mince. I really liked it!
It was browned onions, a few good tsp each of paprica, cumin, coriander seed, cinnamon (try it before you laugh) and a bit of cellery salt and chilli power, cooked off the spices, added the mince and browned, then a tin of tomatoes, and a drained tin of kidney beans and a tin of 'chilli beans' (not sure what brand they were but they were very good, mixed beans in spicy tomato chilli sauce) and cook until bored of waiting. Was great, but as i said, not strictly chilli. We mainly wanted to try the fun looking chilli beans.
Something i LOVE with lamb mince is to brown plain, drain the fat, add a fair few handfuls of frozen peas and a good few spoons of mint sauce, and eat with pitta and salad, or sweet potato chips. Might be more a summer dinner, but is one of my very very favourite things.
