Are you using the usual 100g butter/sugar/flour and 2 eggs recipe?

Other than that it might be your oven?

are you using an electric oven? My baking has improved 100% since I got a gas oven. I'm with GIllian's recipie, can't really go wrong with it (well, not often anyway). I once made a cake that sunk in the middle, being in a bit of a rush I rammed a fairy cake into the "hole", turned it over and iced it

Nobody noticed.....i think.....

Do it all in either 4 or 6 oz's

4 oz Self Raising Flour
4 oz Marg
4 oz Caster Sugar
2 Eggs, 3 if your using 6oz

Oven at 180 for 20-30 mins, depending on your oven you need to keep checking thru the window if its cooked or not!

As yes, Gas ovens also lots better for sponges than electric, we currently have a fan electric one, which is why I said keep checking your cake, as they all cook differently to the recipe!

And don't open the door til it's done or you're sure it's nearly done
