Gotta be mostly prepare in advance.

Main course is mushrooms en croute (plus beef for meat eaters), celeriac and pot mash & green veg

Dessert is strawberry roulade &/or chocolate mousse

We will probably also graze on some cheese afterwards.

So I'm thinking something quite light & fresh is required to start, nothing creamy for sure.

Any ideas?

Thanks!

Bruschetta

ppeatfruit · 17/10/2014 11:28

How about a couple of classy dips like homemade cannellini bean or chickpea and salmon/goats cheese for the non - veggies. With special bread sticks and or corn chips?

EvilEmperorZurg · 17/10/2014 11:30

Second bruschetta: toast some bread (ciabatta), rub it with a cut clove of garlic. Chop some nice tomatoes, drizzle over some olive oil, sprinkling of salt and some torn fresh basil.

Siarie · 17/10/2014 11:33

Ciabatta sliced with caramelised red onions and goats cheese.

Lay a bed of rocket salad on a plate, PPP re ciabatta slices on top and finish with some balsamic vinegar.

Siarie · 17/10/2014 11:33

Oh and I toast the ciabatta with goats cheese in the grill so it's all melted and lovely

Siarie · 17/10/2014 11:34

I hate Apple, they've ruined the iphone. I have no idea why it changed it to PPP. It's meant to say pop the*

ppeatfruit · 17/10/2014 11:38

The op wants something she can make a day or so before Grin.

You can do the recipe I've suggested before then just pop it in the oven or grill on the day. Smile

Deconstructed lasagne. Very easy to do looks impressive and tastes yummy.

You cut fresh lasagne strips in three length ways, boil them for 3 mins and then drizzle with a tomato sauce and add veggie Parmesan curls. Can also add a small garlic bread too.

fatbottomgirl67 · 17/10/2014 11:47

Delis has a great recipe forcheese fritters with red pepper marmalade. It's really easy and can all be done in advance except frying fritters.recipes on her web site

ppeatfruit · 17/10/2014 11:55

Sorry fatbottom That would make me vom! Poor veggies always get bleedin' peppers.

ppeatfruit · 17/10/2014 11:57

Broad bean and mint sounds nice though Grin. DonnaLyman

Ok, this thread got going after I went shopping, just got back!

I went down the dip alley as many suggested anyway, with this goats cheese & pomegranate number. Fingers crossed! Also have olives & artichokes plus some Italian cold meats for DH the meat eaters who can't cope without Smile

Thanks!

I'd love to see this :)

Chewbecca · 19/10/2014 10:04

If anyone is interested I would strongly recommend the goats cheese and pomegranate dip I linked to above, it was scrummy and went down vv well.

Checking in.
I wanted to make something with feta and pomegranate, but pomegranates aren't in our shops yet.

Any wonderful feta ideas? I have fresh mint.

HuevosRancheros · 25/10/2014 01:10

Watermelon and feta salad is lovely, I like the ottolenghi one from Plenty :)
