Low cost and low calorie

Any great low cost and low calorie recipe ideas out there?

I'm using MyFitnessPal and we're (DH & I) used to being able to buy prepared salads and sushi and stuff for lunch, and dinner in M&S on the way home. Unfortunately our income has just halved so I need to stop this!

So what are your go to low cost lunches and dinners that are also fat fighting friendly?!

Cutting out or reducing meat generally achieves both. River Cottage Veg Everyday literally changed my life - loads of great ideas for meat free meals that are so tasty you really don't miss the meat. You can find lots of the recipes on-line.

Anything based around seasonal vegetables and pulses. Like a PP I'd recommend trying lots of different soups. Also vegetable/pulse curries, casseroles, and vegetable-based sauces for pasta. Eggs are another cheap one and you can make some big fancy vegetable-based frittatas that are quite low cal. Keep things like meat & cheese as flavourings.
