Vegetable stew/casserole type stuff..

Looking for ideas for lunch that I can freeze and reheat. I've been enjoying vegetable curry but think I'll get bored. I'm following slimming world so need to have a third of my meals as veg and salad isn't cutting it at the min. Any recipes appreciated Smile

I made a lovely bean chilli for lunch yesterday and froze most of it. Should be completely SW friendly too (passata, kidney beans, baked beans, garlic, onion, sweet corn and spices). I used all Lidl ingredients so very cheap to make too Smile

I make three bean chilli which is roughly based on Jamie Oliver's recipe. Very filling and has a gentle, Mexican spicy flavour.

Chickpea and sweet potato tagine is quick and easy. Dice onions and soften in oil, add a tablespoon of ground cinnamon, half a tablespoon of ground coriander and some diced ginger (about an inch). Add a can of chickpeas, a tin of chopped tomatoes, some chunks of sweet potato, a cinnamon stick and top up with water or stock if it seems dry. Bring to boil, lid on and simmer for 20-30mins.
