Ds, 3.1, loves chicken and vegetable rice...as a ready meal. Anyone got any good recipes that actually taste of something?

You can adapt the recipe- I omit the chorizo and add extra veg, e.g. courgette, peppers, onion, carrots, sweetcorn.

This has become a family staple. Kids not keen on chicken thighs those so I use mini fillets instead. Really tasty & filling dish.

chicken, rice and veg bake

this is delish and best of all sits happily in the oven, no standing at the hob browning chicken or stirring the pan. comes out like a sticky rissotto, great comfort food

Oven at 425 (or lower if yours is better than my crappy old electric thing)
in a big baking dish: add chicken thighs/legs, chopped up carrots (skin on), chopped up pack of mushrooms and roughly chopped onion. Bit of oil, salt and pepper.

about 30 mins later big splash or two of white wine or sherry (optional), stir in rice (white long grain or aborio), 2 cups of stock (chicken or veg - homemade makes a difference if you have it in the freezer)

about 30 mins later rice should be cooked,remove chicken, stir in half a packed of frozen peas, shred chicken with 2 forks, stir back in

ready to serve or sit for a bit longer if so just add more stock or water and cover it with foil

Thanks all. I ended up doing this and DS hoovered it up :)
(I would add that it needed twice the stock in the recipe and would probably only serve three adults at a push though)

I've been thinking of buying Top Bananas - would you say it's worth it? I'm wheat intolerant if that makes a difference...

This mushroom rice is pretty easy too and you could chuck in mixed/frozen veg too to go with chicken.

Google Arroz con Pollo. It's a Columbian dish which basically translates as rice with chicken. Very easy to make. I use skinless and boneless chicken thighs. My 17 month old loves it.
