Hi,

Planning on making a curry later this week which uses half a tin of coconut milk. Any ideas what to do with the other half? Any easy desserts I could make?

Ooh, I made dark chocolate truffles the other week with passion fruit and coconut milk. They were very soft but they were loooovely Smile

Use it in a smoothie.
Make porridge with it.
Cook rice in it.

I would make double and freeze, but I've been a bit too good at that lately and the freezer is bursting.

I like the sound of the chocolate truffles!

Coconut and cardamom rice pudding.
As PP says coconut porridge is lovely, especially with some raspberries.
Use instead of milk in pancakes.

Basically just makes anything yummy. I'd probably add the whole tin to the curry though and use les stock.
