Different vegtable recipes with Sunday lunch

Well dinner tonight. I'm off shopping for ingredients and need some inspiration for something different to serve with roast chicken. Nothing too outlandish but just a bit different for a change.

Anyone happy to share?

Green beans in tomato is popular in our house. Chop up a couple of big, ripe tomatoes, fry in a good glug of olive oil with some finely chopped garlic until soft and starting to turn into a sauce. Boil some fine green beans (fresh or frozen) until just about done. Mix into tomato mixture, heat through and serve. Think I got this from an elizabeth David book. The kids love it!

Sometimes I do all the veg with Indian spices. Got a good recipe for crunchy spicy roast potatoes and then do a couple of veg dishes.

I have some lovely freshly pulled carrots from my DM which are on the tad small size so roasting them whole would work.

As a spout fan anyone do anything exciting with their Brussels?

you can put fried bacon in with the sprouts, also bacon in with the mashed swede and carrot.

Candied yams? Basically sweet potato slices roasted in a 'syrup' of butter, cinnamon and brown sugar. Very rich, but great with roast chicken.

Brussels sprouts or savoy cabbage, sauteed in olive oil, garlic and with pancetta or streaky bacon bits.

Parnsips roasted in maple syrup or honey.

Throw cherry tomatoes, baby onions/halved shallots and halved new potatoes in a roasting tray with olive oil and salt and pepper-roast for 40 mins and then add a tin of drained cannellini beans for 15 minutes. Goes beautifully sticky and sweet, nice with basil added at the end too.

Stir fry shredded Savoy cabbage and leeks, wilt a big handful of baby spinach into it and add some cooked frozen petit pois. All your greens in one go!

Fennel baked with cheese
Grated courgette fried very lightly and quickly in butter with some crushed garlic
Roasted small beetroot served with chives and yoghurt

Wilt down spinach then stir in cream and grated nutmeg, and maybe some chicken stock, or at least the roasting juices. I love this with chicken.

Braised veg (usually we do onion, celery and carrot). Cook gently in a generous amount of butter until tinged with brown, then pour in enough veg stock to not quite cover. Cook gently with lid on, either stovetop or in oven.

Yours sounds lovely, Islets, I often sauté shredded cabbage with butter and garlic but never thought of adding all the rest.

In fact this all sounds delicious! My fridge currently resembles Old Mother Hubbard's but maybe I should drag myself to the farmers' market.

Thankyou so much. These all sound delicious and will have us sorted for many Sundays. I'm listing on my kichen wipe board and will tick off as we try them. I just need to decide for today and then pop down to the shops.

A very quick veg to go with Sunday roast is to chop carrots and celery and make a foil parcel of them, add a couple of dabs of butter before sealing the parcel well.
Pop into the oven for about an hour, takes up very little oven space and no saucepan to wash either!

red cabbage with cider vinegar and cinnamon? I usually bung on some buttery fried onions and a few cubes fo apple from the freezer too. It freezes well so I do a whole cabbage at a time and freeze in boxes for a quick veggie option from the microwave to add to any roast.

Leek pudding: poach sliced leeks in milk. Use the (cooled) milk to make a thick yorkie batter. mix in the leeks and bake in a loaf tray until solid, serve in slices.

pureed carrot with butter and cumin.

Cook sliced carrots in a microwave steam bag with a glug of honey and a chunk of butter.
