Does anyone have a tried and tested pate recipe they would like to share?

Would like to do some in ramekins for a buffet lunch this Sunday. Only ever made a veggie one before!

Quite open to different flavours etc.

My really easy chicken liver pate; it freezes really well too, so I often make a big batch and freeze it in little plastic boxes for naice packed lunches for work Wink
You need...
2 x 227g cartons of frozen chicken livers, defrosted and drained
200g butter
2 tbsp double cream
2 tbsp brandy
1 tbsp garlic purée or 1 clove of garlic, crushed

Heat a frying pan and melt all the butter. Fry the chicken livers until well browned, the put everything from the pan into the food processor, with all the other ingredients. Whizz to form a smooth purée, then pour and scrape into ramekins or one larger serving dish. Chill the pâté until set, and until needed.Â

Smoked mackerel

Use a fork to pull the fish from the bones and skin, mash up with some butter/spread, some black pepper, lemon juice (and some parsley)

google Delia Smith's chicken liver pate - delish. Declared by DM's partner as the nicest he's had, and he's road tested a few.

as PP said above it freezes brilliantly.
