I'm just about to make beef meatballs, but have realised I've no bread.
Can anyone give me a breadcrumb free recipe please??

Use oats?

youbethemummylion · 03/10/2014 16:28

I never use breadcrumbs just beef mince an egg yolk and whatever herbs and spices all mushed up then formed into balls.

I just use beef! I know you can use egg to bind if need be.

Or just the beef mixture, bake in the oven to cook and chuck in sauce at end.

Jamie Oliver suggests using cream crackers!

Do you have any stuffing. I make pork meatballs with sage and onion stuffing. Not sure it'll go brilliantly with beef though?

Thanks! I thought that breadcrumbs were essential Blush.
An egg it is!

Maybe too late, but we're gluten free here and I use tortilla chips (blitzed) - gives a kind of a Mexican feel. I think if you use egg alone they get too squishy, I'd leave out the egg.

a bit late but i don't use breadcrumbs and if they are going in a sauce, I am usually really lazy and just roll the mince into balls and then microwave for a couple of minutes, they keep their shape nicely and the fat comes off

Just meat, squash them together well and don't jiggle them too much

Completely too late now but just use the yolk not the whole egg or it will be too sloppy.

Definitely oats, sour cream and seasoning - delicious!

gastrognome · 04/10/2014 05:56

I never use breadcrumbs or egg either. Just squish the mince in my hands with some seasoning and herbs and then roll into balls. They never fall apart.
