Can I freeze Caramel

I made salted caramel cupcakes in the week, I now have copious amounts of homemade Caramel and butter cream left (which I will use next week for another batch). Could I freeze them or is in sealed containers in the fridge going to be OK ?

Do you mean caramel butter cream or caramel and butter cream.

I'd think butter cream whether with caramel or without would freeze ok. If you mean separate caramel, I wouldn't freeze that as it would, if hard, go sludgy.

If only for a week, I would think that fridge would be ok.

thanks tb it's sort of pourable caramel made with butter, sugar and condensed milk and also separate butter cream with the pourable caramel mixed in ('tis delicious).
I plan on making some more Sunday so would be 5 days in the fridge.

Sory, just seen the reply.

If you put the caramel in the fridge, it will dry out a little and the sugar may start to crystallise. All you'd need to do would be to heat it on a medium heat to re-dissolve the sugar without boiling it to make it smooth and pourable.

Even fudge that hasn't set properly can be put back in the pan to dissolve the sugar so that it can be reboiled and rebeaten. Traumatic childhood experiences of a dm making and remaking fudge that had to be forever reboiled are to blame Grin
