Fennel - what do you do with it?

That's it really. It comes in my veg box and I am at a loss as to what one does with fennel.

Tonight had some roasted with cubed butternut squash , celeriac and courgette served with pork chop and new potatoes.

mmm, thinly slice it and put on salad, roast it, make soup. such an addictove taste.

fennel and watercress are my absolute favourite tastes. not together though

i often saute it with garlic, red and yellow peppers and a squeeze of lemon juice then serve with rice and chiken or fish, also nice in ratatoui

mmm raw, as a salad chopped up with apple and sultanas in curry mayonnaise

roast it with fish. Jamie Oliver often uses it as one of the components in his veg 'mat' where the fish sits on top then is cooked in the oven. Or good grated in a salad

I love making fennel mash - cook the fennel and potatoes and mash together! yum!

Fennel salad is lovely

2 Tablespoon oil
2 Tblsp lemon
Pinch of salt and pepper

Mix that all together and cut the fennel very finely and mix in salat sauce.

nice with fresh tomatoes

Gorgeous when just boiled - goes great with steak and pepper sauce! Or cut in quarters boil when tender drain, spread out in dish sprinklt with freshly grated parmesan and stick under the grill - delish.... Or roasted, or make some soup, or slice thinly and mix in to tomato sauce with some chorizo for yummy pasta sauce etc etc
