Really stumped for vegan meals- any suggestions?

Meal ideas- please help- There will be seven of us in my house for a two week period over christmas.

One vegan, one vegetarian, two die hard meat eaters ( one of whom doesn't eat dairy) the others will eat anything.

I am struggling to think of ideas for evening meals that will please everyone.

So far I have planned the following meals;

  1. Chicken fajitas and tofu & mushroom, served with tortillas, guacamole, salsa, salad and mexican rice.
  1. Chicken tikka skewers served with vegetable and chickpea curry, hm chapatis and rice
  1. Morroccan lamb with chickpea and vegetable tagine, flatbreads and couscous.

er- that's it- but I thought about putting everything in the table and everyone can help themselves.

So that's three meals down, 11 to go- including christmas dinner.

I'm stuck.

Can't see it already mentioned - sorry if I've missed it - you can do Satay sauce - veg or chicken skewers served with rice...

This black bean chilli is really nice. IME even hardened carnivores don't notice it's not meat (even more so if you serve it in a burrito!). You could throw in some meatballs or something for your DH is he's being completely silly about it, I guess.

I made baked aubergines stuffed with a lovely rice and veg mixture tonight. You can throw in some chorizo for those who can't live without meat, and put cheese on top for those who want it.

prawn or tofu laska
middle eastern theme is good
mushroom risotto with Parmesan for those who want it

Risotto is so adaptable - sainsburys basic Parmesan is vegetarian although not vegan obviously. You could also do crispy pancetta cubes to sprinkle over for determined carnivores.

Great ideas so far. How about:

Turkish/Greek theme - flatbreads, hummus, falafels, tatziki, griddled aubergines, a greekish salad, lamb

Chilli - rice, sour cream, guacamole, tortilla chips, bean/meat chilli

Mushroom risotto - made using veg stock and wild mushrooms. Parmesan on the table. Some griddled chicken on the table for meat eaters to add.

Lovin the greek/turkish theme pumpkin.I remember eating great butter bean in tomato dishes there too.

I've got a Greek marinade recepie which is super yummy. It goes very well for either veg skewers or lamb ones. Serve with some jazzed up couscous - almond flakes and peach is quite good.

It's no drama chopping the veg and making the marinade earlier in the day. It's a bit of a pain making the skewers but you could enlist help with that.

With the number of people they might be quite fiddly to do, I've always used the grill but maybe oven would work fine.

You need:
Lots of dried oregano so everything is coated.
2 garlic cloves per person.
Lemon juice about 1 lemon per person
Olive oil
Dried parsley
Bay leaves - 1 per person
Salt and pepper.

Just give it all a good mix with your hands around the veg and leave for at least 2 hours for the veg and longer for the meat.

You can sub some of the lemon juice for red wine vinegar or white wine.

Grilled tofu with chimichuri sauce served with sweet potato wedges and some green veg. Do steak for the meat eaters.

Yotam ottolenghi's multi vegtable paella.
Really doesn't need anything else with it but you could do some prawns or fish for the meat eaters. You need to double the quantities of everything tho, for 4 it seems to only serve 2.

BBC's jerk sweet potato and black bean curry.

Some kind of jerk chicken curry for the meat eaters. Or jerk chicken thieghs or something.

Serve with rice and peas and a mango salad or something to freshen it up.

Thai curry with either tofu or prawns (cooked separately then chucked in the meat eaters food at the end.

Sushi - do a mix of fish, meat and veggie.
