We have chicken baker a lot - marinade chicken breasts in whatever you fancy:
bbq sauce made with ketchup, smoked paprika, tabasco, garlic and dash of honey/maple syrup
Fresh lemon zest & juice, garlic, herbs
orange zest & juice with 5 spice, garlic, soy and ginger etc.
then serve with appropriate carb we like jacket potatoes with the bbq and lemon one or brown rice with the Chinese-style one.
I do loads of veg to accompany red onion, mixed peppers, baby corn, garlic anything you fancy really.
Just bung it all in one dish and bung in the oven - if you do jackets also just bung them in the oven too.
Stir once and serve piping hot. Also make fajitas this way, saves slaving over a hot stove!
