Anyone got a good recipe for left over roast pork?

It's leg of pork, from Lidl if anyone's interested and was excellent but there's some left, what do I do with it?

I usually make a hash with whatever veg I have lying around, fry up some leek or onions, garlic, shredded carrots, tomatoes, smoked paprika, chilli, shredded pork and maybe an egg on top.

rice salad- cooked rice, caramalisd onions , boiled eggs chopped, frozen peas/ sweetcorn and any leftover cooked meat- pork/gammon/ham are good. Mix together- season and the add either mayonnaise or salad cream. Its a favourite in our family :)

I came on to post this exact question so watching for ideas! I don't have a huge amount but would like to feed myself and 1yo DS lunch out of it.

A creamy mustard sauce.... Cream/milk/mustard in pan... Pop pork in, simmer slowly till tender.... Goes with potatoes/rice/pasta etcetera.... And a big veg portion on the side

If it's fairly soft and can be shredded, then shred it coarsely and crisp it up in the oven a bit. Then it's lovely either in pancakes or baguette with thinly sliced/julienne cucumber, spring onion and hoisin sauce.

I once made roast pork carbonara. Don't do that. Have a sandwich.

I do pork in a cream and white wine sauce with rice and veg served with it. Really easy and lovely too!!!
