Doughnut Disaster.....advice please

Actually, the advice I need is for the actual frying of the doughnuts. The small test doughnut I did was perfect, however, with the rest they were either undercooked on the inside or burnt very brown on the outside.

I struggled to regulate the temp of the oil - didn't use a thermometer.

Any hints or tips would be great please.

Try making the donuts smaller therefore less cooking time.

Without a decent thermometer it will all be down to guess work

Yes I will definitely make them smaller and I will get a thermometer although have managed without one all these years!

I was wondering if anyone had any 'tricks of the trade'?

When frying doughnuts i use a wok and i warm the oil using the lowest heat on the burner. Then i fry the doughnuts. This works for me, the doughnuts are cooked all the way through and come out golden brown.
