anyone got any nice vegetarian one pot recipes?

My SIL is due any day and when we go and visit her I'd like to take her some home cooked food. When I've done this for other friends I usually do a lasagne or shepherds pie type thing but she's a veggie and hates mushrooms and i'm a bit stuck. Am very much a meat eater myself.

Anyone got any nice properly vegetarian easy to cook recipes they'd like to share?

Then you are in luck as she isn't a vegetarian.

LeBearPolar- It's weird because she refers to herself as a vegetarian, as do her whole family, but of course she isn't one.

I was looking for purely ' vegetarian' dishes though because I would like to take her something which might keep for a couple of days, to me fish can be a bit dodgy like that. But fish pie- great idea.

Googie- I have been wanting to start using my slow cooker again, so I shall be making that for myself!! Love nachos and cheese...

For the veggies: Sil does eat cheese but I think certain cheeses aren't vegetarian? I guess it must be written on the packaging?

Yes. It has been written on the packaging for at least a decade. Probably on most of the cheese that you normally buy anyway.

This thread is making me reconsider getting a slow cooker...I've always dismissed them as only for carnivores. Is there a good veggie slow cooker book or website?

Most supermarkets do frozen mixed Mediterranean veggies, defrost and cook with wine (and one for you), carton of tomatoes and bobs your uncle! Later with pasta sheets and bits of torn mozzarella and raw baby spinach then top with cheese sauce for lasagne. Add feta instead of mozzarella with a bit of nutmeg for moussaka and whisk in one tub of greekyogurt and an egg into the cheese sauce - goes soufflé like. Needs to stand for at least 10 mins before dishing up to set.

The BBC website has a recipe for Somerset Stew which is lovely. It is served with cheese mash but we sometimes have with jacket potatoes. Freezes quite well.

Happy- that stew looks lovely. Perfect actually as some recipes have it with sausages so I can do the veggie version of the stew for SIL then do a couple of sausages separately for her dh as he is a meat eater.

I don't think people were being rude to the OP. If anything, those of us pointing out that a vegetarian wouldn't eat fish are having a go at the alleged vegetarian. It's very annoying for vegetarians to see fish or even chicken eating people calling themselves vegetarians, because then we find ourselves staring at a salad with bacon on top (yup, happened to me once) served by well meaning people like the OP, who have been told that this is ok.

I'm a lacto-ovo-vegetarian I think. I do get cross with fish-eating veggies but hey, life's too short!

Chickpea and Spinach Coconut Curry. Fry onions, add curry paste. Tip in chickpeas and coconut milk. Cook 20 minutes. Stir in spinach to wilt it. Serve with chapattis and chutneys.
