What are your foolproof curry recipes?

We often cook curries when we're feeding a crowd, but we tend to stick to the same recipes over and over again.

Our default recipes are:

Rick Stein's lamb karahi from
Jamie Oliver's Peter's Lamb Curry
Ken Hom's Vietnamese Chicken Curry
Madhur Jaffrey's Mushroom and Potatoes with ginger and garlic
Madhur Jaffrey's Gujarati Beans

So, whilst I recommend all of the above recipes as being absolutely superb, I'd love to hear if any of you have great tried and tested recipes that I could have a go at.

We aren't curry eaters, but this always goes down well - creamy cashew chicken. The only note is that I usually put in about 500ml chicken / veg stock too.
