I also have various salad bits and basic store cupboard stuff.

Anyone got any interesting lunch suggestions please? I have no imagination.

I'd keep it simple - chicken salad maybe flashed up with a home made garlic/lemon/pesto or wasabi mayo?

make mayo in seconds with a stick blender -

NB don't use this method for olive oil mayo.

I should have said, I usually just have chicken and salad and a homemade dressing, which is nice but, you know, I'm in need of a change.

How would you make your mayo garlicy? (assuming raw garlic would be a bit much)

I use raw garlic :)

I'm loving spicy wasabi mayo at the moment.

Noodles chicken & grated veg with some soy and honey dressing.
Yum !

Coronation chicken? Fry finely chopped onion, cool, mix into mayo wirh curry powder or garam masala and chicken. My mum adds sultanas but I don't.

ooh fresh mayo, I like that idea!

once you discover the stick blender method you'll never buy shop mayo again - it's insanely easy.

But olive oil tastes bitter if used - not sure why. I use organic rape seed oil, which makes a very nice mayo.

Ok, shame about the olive oil, I only have olive or sunflower oil in. I'll definitely be trying that in future though!

I don't have any noodles actually, but I do have some pataks curry paste. I wonder if it would taste a bit raw just stirred into mayo?

Or actually, I could fry it with onions couldn't I? Then mix with mayo and chicken.
