Does anyone know how long egg whites can be kept in the fridge for? Also can you freeze egg whites and if so for how long.

you can deffo freeze them. Not sure for how long - I would guess 3 months.

I made some meringues yesterday with egg whites that had been in the fridge for 2 days and tbh it wasn't that great. I would use them asap for maximum whiskability if you need them stiffly beaten.

Are you making a queen of puddings, or am I being too literal?

You can freeze them for up to about 9-12 months, very successfully.
