Vegetarian slow cooking

Looking for recipies for healthy, vegetarian slow cooking, but that exclude legumes - beans, peas, lentils, chickpeas etc. Tofu can be included though. Thanks if anyone can help with this at all!

I find that orzotto (with pearl barley) works better in the slow cooker than risotto. The rice can get really mushy and unpleasant...

Do you eat Quorn mince? I do a nice shepherd's pie filling with it and it works better in the slowcooker than on the hob.

We need to avoid Quorn too unfortunately. Tippytappywriter/mrspremise do you have any good recipies for risotto/orzotto please?

I'd like to try other grains too but am quite new to slow cooking.

Should have added I prefer easy recipies, where ingredients can be chucked in together without separate pans, if possible. Thanks
