how far in advance can I make birthday cake

making a rainbow swirl cake and some rainbow cake pops for dds birthday next Sunday. cake just needs baking, frosting and decorations stuck in. cake pops a bit more time consuming.

how far in advance can I make stuff, and how do I keep it fresh??

also need some of the cake pops to be fresh to take to school on Tuesday

Have you got a freezer? You can make the cake any time you like and just stick it in the freezer (before you decorate it). You could probably freeze the cake pops too and then just ice them the night before.

No defrost on the worktop.
Wrap in film when you freeze then unwrap and pop on a cooling rack to defrost. Only takes a couple of hours.
