Using up ripe bananas?

Help, I've a silly number of very ripe bananas Confused. Please inspire me with ideas of how to use them up. If your suggestions are dairy and gluten free, then all the better Grin. Thanks.

Banana cake. Smoothies. I'm sure you can find gluten / dairy free recipes. Grill / barbecue them and drizzle/ drown in Nutella.

They can be frozen and used for cooking - look horrendous when defrosted, but taste the same.

Just made GF banana bread today

Used 3 large ripe bananas, 3 eggs, 80g ground almonds, 100g GF flour, 100g oats, tea soaked sultanas, walnuts, cinnamon, mixed spice, nutmeg and a couple of table spoons of full fat yoghurt. It's quite a dense cake but tasty.

You can make a great fake ice cream. Just freeze the banana without peeling. Then defrost a little to peel off the skin. Then blitz with a stick bender until smooth. It tastes creamy and my son loves it.

Nigel Slater has a good banana ice-cream recipe - I think it is just bananas, sugar and cream - absolutely delicious! Alternatively, how about a banoffee pie?

Ripe bananas are very perfect for banana cake or banana loaf/bread.

Ingredients

2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter
3/4 cup brown sugar
2 eggs, beaten
2 1/3 cups mashed overripe bananas

Directions
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

I was going to say banana and cardamum bread or banana and apple tea loaf.

Both very acceptable. I freeze them too. Look like big poos and a bit watery but fine for baking with later.
