Wahaca frijoles

I love love love these - I basically go there for the frijoles, so imagine my excitement when I found a recipe! frijolesrecipe
And now I'm very sad because what I made does not taste like frijoles. Hmm

It's a pale grey brown colour, with nutty textured bean bits, that tastes mostly of butter.

Does anyone know how to do this right?

I soaked the beans for about 16 hours, then boiled for an hour as directed on the packet...

Never been to Wahaca :(
But I do have Thomasina's Mexican Made Simple, and the black bean cooking for the frijoles is quite detailed - boiled up with onion, thyme, anise etc iirc. Not just boiled in water, which you would be forgiven for thinking was the intention by the recipe you linked to
And then you blend them and cook in butter with onions etc
I'd recommend buying the book or getting it from the library if poss.
We did it on here as one of the Cookery Book Club books - have a search, it was a very popular book :)
