Can I Make Crudites Ahead of Time?

Birthday party tomorrow, I want to offer celery and carrot sticks as options. Can I cut them up now? If so, do I leave them in water until tomorrow afternoon?

Agree put them in water but then will need to drain them and maybe pat with kitchen roll tomorrow.

Ok, it's called "The Shocker" - you hold out all fingers except for ring finger. It stands for "two in the bush, one in the tush". I doubt that's actually v practical, but never mind.
