What can I do with these red onions?

Ocado wouldn't sell me just one red onion (the downside of ocado), so I ended up with a bag. I have about 10 small ones left, and it seems a shame to just throw them out. What can I make with them?

Chop and bag them and freeze them to use some other time, I use the food processor to do loads at once.

You can make a lovely salsa. Pop in blender with fresh coriander, tomatoes, garlic, jalapeño chillies and lime juice. Lovely in a tortilla with beef strips, with chilli con carne or as a dip. Yum! Only takes a couple of mins too. :)

Caramelise them and serve ontop of goats cheese bruschetta and a squirt of balsamic glaze

I've just made a lovely dish with onions.

Fry onions till v cooked through and starting to brown.
Add s&p, cumin, chilli, cinnamon and cook some more.
Add cooked rice and cooked lentils ( I used a packet of ready to use puy lentils)
Add grated lemon or orange plus juice.
Season and add more spices if necessary.

It was lovely straight out the pan, just scooped up with lettuce leaves. I think next time I would let it cool and add some cubes of feta and diced tomato.

Think it was an old abel&cole recipe that I have completely bastardised.

Can you freeze red onion soup?
I have meal planned dinners, and am not in at lunch for a few days, but the soup sounds like a good idea.
The salsa would have been good with tonight's dinner, if only I had asked this question yesterday.

Definitely a tart. Goats cheese and red onion, with some rocket &
Balsamic on the side.

Alternatively a nice salad - quinoa beetroot chickpeas red onion avo lime

They will keep for a while and can be used in pretty much anything - don't throw them out - keep them in the cupboard and use a few at a time. Red onions are a staple food in our house, I always have a bag of them in the larder.

I like making red coleslaw using red onion and red cabage with either carrot or beetroot.

It goes great in curries, casseroles, sauces, pie fillings & pasta dishes.

Peel carefully ensuring you are careful to keep some of the root that holds all the layers together in tact, then cut in into eighths with each eighth having some of the root - then roast these chunks with olive oil and herbs - makes a great side-vegetable for a sunday lunch or topping for a pizza

use in all kinds of mexican dishes, fried with spices

use a small amount raw in salads

Onions keep for weeks! Just keep them in the cupboard and use whenever you next need an onion!
