What do you put on your mini pancakes? DD is 3 so your ideas are great the slight difficulty I have is DS is 1 but has an egg allergy. Thanks for your ideas, sometimes I just need a bit of inspiration or else I get stuck in a rut!

my ds is allergic to eggs and milk Medulla.

it is a pita, i agree.

Usual minipancake toppings are:
Cream cheese
honey and fruit
passata/tomato based pasta sauce
grated cheese
blue cheese
tinned peas/sweetcorn
tomato,mozarella and pesto

Or just plain with chopped veg (I do a big lot in the steamer every two/three days and keep them in covered bowls in the fridge. Then I add it to the couscous/mini pancakes/pitta bread etc etc).
