I'm bored with potatoes....

...what can I cook with them that is more exciting?

Potatoes are a staple food in our house - we don't each much rice/pasta. I mash them or chip them usually. There must be something I can do that is more intersting.

I fancy trying to make wedges. As far as I can tell the consensus is to cut them coat them with oil & season. Bake for about 30 mins.

What are your favorite seasonings?
What else can I do with pots?

you can get a garlic and herb mix that you put on them while you roast them, they're yum!

peel them slice them very thinly, slice an onion scatter both together in a roasting tin drizzle over olive oli and roast for 45 mins-1hr until there are lots of crispy bits. You need to turn them a couple of times.

this is fattening, but they are very nice sliced thinly, put in a dish with onions/cheese/parsleygarlic, or any combo of these, season, pour over a tub of cream and cook in a low oven until tender.

you can use milk to make it less fattening, or even stock.

I get so bored with them, I can't be bothered to peel them. Then the mash tastes all crunchy and it's actually quite nice.

you can do my recipe with them unpeeled too makes it taste more wedgy!

Grate them, rinse and squeeze out liquid. Add a beaten egg, salt and pepper. Then tke a handful mould into a flat kind of pancake shape and fry until crispy.

Grate them and mix them with grated carrot herbs etc then shallow fry or grill them - like a rosti sort of thing.

mash them with mashed parsnips or fried onions or mustard or cheese for a delicious alternative to boring mash.

Also Sweet Potatoes are delicious if made in the same way as jacket potatoes.

Fattening but nice - cut potatoes into chunks about the size of a small roast potato
Cut an onion into slices and also a red & a green pepper. Chop a couple of rashers of bacon into bits and slice a few mushrooms.

Fry onion, peppers, bacon & mushrooms in some olive oil with garlic
Meanwhile chuck potatoes into deep fryer until golden.
Put potatoes into an overnproof dish and mix in peppers/onion/bacon/mushroom mix
Sprinkle with mozzarella cheese & grill until cheese has melted.

OR - bake potatoes. When done, scoop out flesh & mash with sour cream instead of milk/butter. Add sweetcorn, onion, fried bacon, chopped peppers to mash. Spoon mash back into potato skins, top with cheese & grill until hot & bubbly

Potato salad? This is always best with sweet potatos I find.

Or you can dice them, boil them to almost done, then fry them with lots of herbs, chopped garlic and nutmeg, then stir in either full cream (on the heat) or greek yoghurt (cold) and serve as a side dish.

Or bake them, cut them in half and top with cheese, chorizo and a few chopped spring onions and put them back in until the cheese melts. You can use virtually anything you like to fill them like this and they are lovely.

Do them the Irish way. Put potatoes in pan and add some water to about half way up the potatoes. Cover and boil, drain, return to pan to and place over low heat to dry off, shaking to stop sticking (adn to fluff them up) then serve. This is best with floury potatoes. Quicker and easier tahn mash and no peeling

How about potato pancakes. Mash potatoes, add one egg, season, add flour, some grated chese,greese the baking sheet and put spoonfuls on it and bake in the oven. turn over when browned on one side. my kids like them.

Salad. Cook pots in their skins, after 10 minutes add carrots in their skins. When soft but not mashy, take off the heat, get rid of the cooking water. Hard boil some eggs. peel pots, carrots and eggs, chop them all up, edd gurkins, can of peas, chopped red onion, crashed garlic. Mix it all well, add tine drop of olive oil, a squise of lemon, chopped herbs. Delishious served with mayonnaise or salad cream.

I forgot to mention if you'd like a non-vegitarian option, cut some cold roast chicken pieces or beef or ham and mix it before serving with the dressing.
