I have a cauli that I need to do something with very soon, thought about a cauliflower and potato curry, does anyone have an easy gluten free recipe for this or another good idea?

Chop it into florets and mix with a little oil, and lots of chopped ginger and garlic and some ground cumin and roast it for about 20 minutes then mix with a handful of chopped coriander and about 150g cooked green peas. Serve it with rice and cucumber raita.

Second the roasting idea. I did that for the first time last week and it was surprisingly tasty - surprising in that I'm not that keen on cauliflower....

I love roasted cauli - it's what I'd do, every time.
The other thing is to grate it, and use it like rice (microwave) or fry it off like in kedgeree

I've done it in olive oil some salt and pepper and Parmesan. Delicious.

Dh did a sort of pilaf in the microwave once. It was lovely.

Other than cauliflower cheese and roasted cauliflower, I am fond of cauliflower, almond and turmeric soup which sounds odd but is delicious. Think it's a Leon recipe.

I realise you'd have to use gluten-free pasta, but this is our absolute favourite cauliflower recipe:

I made a 'loaded' cauliflower soup this week. Tastes like filled potato skins.
Fry bacon until crisp
Fry shallots and garlic in butter
Add cauliflower
Cover in chicken stock
Cook until tender
Blend well
Add chopped spring onion, crumbled bacon and a big dollop of sour cream.
Season well

So I roasted some cauliflower and potatoes in some coconut oil, made curry sauce from scratch then added the cauli and pots and some fresh spinach. Not conventional but sooo good.

Also made a tomato & cauli pasta

Tomorrow is cauliflower pizza (cauli used as the base) I think I've discovered a new love!

If you ever need to use up cauliflower again I can second the Ottolenghi recipe linked above. To call it a salad makes it sound dull but it is very, very good. We have it often.
