Recently discovered pork mince - any ideas?

It's very cheap and yummy so I just need lots of suggestions. I do pork and apple burgers and am trying some meatballs in tomato sauce this week. Any other ideas? Was going to try with beef or instead of it in a bolognese. Any other suggestions? Ta!

Fry with breadcrumbs, salt, pepper & herbs. Stuff into red peppers, top with cheese & bake in hot oven for 20ish minutes.

Pork, Celery and Coriander Meatballs

  • Purée about 4 sticks celery and half a packet of fresh coriander in a blender.
  • Put in a sieve and allow excess liquid to drain (I save it to make tomato sauce)
  • Add pork mince and a tablespoon of soy sauce and mix well.
  • Form into small balls and fry in sesame seed oil over a fairly high heat, turning frequently.
  • Serve with simple tomato sauce and pasta or noodles and stir fry sauce.

Pork mince curry with apricots. From memory, add chopped onions, garlic, curry spices and then add pork mince, water, tomato puree and chicken stock. Cook for a bit and then add quartered dried apricots and loads of fresh coriander just before serving. it's sweet but rather good!

Thai green pork balls in coconut broth

Finely chop shallots, kafir like leaves and mix with thai green curry paste and pork mince.
Fry till browned

add Tin of coconut milk, thai fish sauce and spring onions/thai aubergine .
Cook noodles , drain and add to the sauce/pork balls. Thin with stock if too thick.

Pork and fennel seed ragu.

Onion, carrot, celery softened. Add mince and brown. Add garlic and crushed fennel seeds plus a glug of red wine and a jar of passage. Plus salt and pepper. Simmer for ages.

Oh and bolognese with 50/50 pork and beef mince is also delicious! There's a jamie recipe for it (Ministry of food I think?)

Mix the mince with finely chopped ginger and garlic and add a splash of fish sauce then make into little balls the size of a walnut. Brown them in a little oil in the bottom of a large saucepan then put to one side. Add stock to the pan and bring to a simmer then add some egg noodles, when the noodles are cooked stir through some chinese greens to wilt. Add the pork balls back to warm through then ladle into bowls and add some chopped coriander and finely chopped spring onions. You want to end up with soupy noodles so that it's substantial enough for dinner. Gorgeous!

Lasagne is also nice using half pork mince and half beef. Gives it a lovely rich flavour.
