Sandwiches for toddler

My toddler has never really taken to sandwiches but all of a sudden is obsessed. I feel like I could put anything in between two slices of bread.

So any suggestions beyond the usual? Been doing pittas with tuna and sweetcorn, sliced bread with smoked salmon and cucumber, cheese and tomato. Want to experiment a bit more and see how far I can take it! (am a competent cook)

How about sardine and cream cheese or sardine and avocado? Chicken and roast veg is nice and my favourite is ham and hummus.

peanut butter and banana or apple slices
spicy bean pate
mackerel
ham and mustard
chicken and pesto/cranberry sauce/sweet chilli mayo
roast beef and branston pickle
egg and cress

I haven't got any exciting or different suggestions for fillings, but my dd, when littler, loved it if I rolled a sandwich up and then cut it across into five or six pieces, making bite-sized spirals.
