pulled pork freezes well....make plenty of sauce, and have it with fajitas
or slice left over roast pork, again, make plenty of gravy, and freeze it together, defrost and reheat gently, serve with freezer veg and giant yorkies....bought or homemade
if you save some bolognaise it is great for making calzones, you'll need pizza dough, but that's not hard to make, and cheese, peppers/onions
also pulled pork works well on pizza too...base, pesto, pulled pork, bits of ham/sausage/cheese
chicken breasts...if they are fat ones cut them in half and then flatten them, cover with mayo and breadcrumbs and fry/oven bake ...Half a chicken breast sounds stungy, but they bash out well and look very big!
not on your freezer list,but maybe in your cupboard...3 tins of beans...kidney/canellini/chickpeas, drained and crushed up, mixed with the insides of two baked sweetpotatoes, plenty of S&P, handful of breadcrumbs and some very finely chopped onion if you like it....let that cool and then shape it into burger patties....that makes eight very very big ones .....I find they hold their shape better if you pat breadcrumbs over them...like a fish cake. And next time I am going to make that into 12, my starving six foot+ teen only managed one bean burger with a roll/onion rings/chips and salad.
