I don't know if you are looking for lunches or main meals but here are some ideas, generally either quick or low hassle:
Soups - I usually do vegetable & lentil or veg & bean. Bean ones are faster due to the beans being already cooked (canned/cooked and frozen). Bean soups are nice unblended, but blending also fine, lentil soups - if using red lentils I blend the soup, if using puy I leave it chunky.
eg soften onion, carrot, celery gently in oil for 10 mins with herbs eg thyme, rosemary. Add a few cloves of garlic, cook for another min. Add half a tsp marmite (B vits) and a slosh of mushroom ketchup, some chopped tomatoes (fresh or tinned), pour in boiling water to cover the veg, add drained beans (eg black eyed beans, cannelini, borlotti, chickpeas) and simmer for 5-10 mins. Add lots of chopped fresh basil, and serve. Grating of cheese optional. Shredded spinach or similar is also nice wilted in for the last minute. This is kind of minestrone like, and I do sometimes include some mini pasta.

Homemade bean burgers batch made and can cook from frozen in 30 mins with sweet potato wedges/normal wedges/buns and salad. Can post recipe.
Pasta with hm pesto - pine nuts/cashew nuts (cashew way cheaper!), basil, olive oil, garlic, seasoning. We usually blend in a load of frozen peas too, makes the pesto very sweet and gets DD eating more veg. Serve with stirfried onion/pepper/broccoli/green beans mixed through.
Stirfry veg in garlic, ginger, soy, honey, 5 spice with quinoa. Alternatively can add cashews/peanuts or omelette strips for protein. Sprinkling of sesame seeds on top is nice.
Jacket spuds, beans and cheese with salad
Roast veg, eg aubergine, courgette, onion, tomato, pepper with garlic then serve on quinoa with a drizzle of balsamic and some fresh basil.
Bean and veg casserole (adapted from my mum's sausage casserole, i.e omitted sausages!). Saute chunks of onion, carrot, celery, pepper in saucepan for 5 mins til colouring. Tip in 1 tin baked beans, one tin tomatoes and chilli powder to taste. Simmer for about 10 mins and serve with rice/potatoes/pasta and green veg. Sausages on the side optional for meat eaters.
Chachouka/Hueveros ranchos type dishes - loads of variations on the internet. Basic principle being make a thick onion & tomato sauce spiced as you like and then make wells in it, crack an egg into each well and cover the pan and cook on a gentle heat for 5 ish mins until eggs are done as you like them. Nice with a green salad and bread.
Mushroom stroganoff.
Saute sliced onions in rosemary and/or thyme for 5 mins til golden, add tons of sliced mushrooms and a load of crushed garlic and saute until the mushrooms give up their water and take on colour (5 mins?). Add a veg stock cube and a small amount of boiling water, mix and reduce down to just a couple of tbsps liquid (another 5 mins?). Pour in a load of double cream, chopped fresh parsley, mix, warm through and serve over rice with broccoli/greens on the side.
