Does anyone know what that is? Googling has produced braising / stewing steak but I can only find that to buy diced and I don't want it diced. Any other ideas of what it might be?

I usually buy it in big slices from the butcher, with some circles of bone and some lung bits. If you go in and ask for a bigger piece presumably it won't be sliced/chopped? It is quite fatty but nopt a sinewy as shin beef, for example.

Are you going to do a pot roast in liquid as it's usually used for casseroles?

Thank you - yes, it's a slow cooker recipe. I'm tempted to just buy the diced braising steak but I don't know enough about meat and slow cooking to know if that will be ok!
