Low-fat menu planning help needed please

I'm out of inspiration this morning but we need to get back to lower fat meals for the sake of DH's insides Shock
We did really well this time last year, lowered his cholesterol to normal limits by Christmas and stopped all sorts of gut-related goings-on but have slipped more recently and nearly two weeks of camping have had unfortunate and unpleasant results!

I'm trying to drag up the recipes/ideas we used before but my brain won't work - we did reduce/cut out a lot of meat, ate more veggie food and more fish, swapped ice-creams for sorbets, tried out some yummy Hairy Dieters recipes (korma and tea bread spring to mind), etc. We have kept up with various things but have slipped a little too far back and need to get things back on track.

Please help wise Mnetters.

The Hairy Bikers diet book is fab but I do find the recipes a bit time consuming.

Have recently found a fabulous website called www.cookinglight.com . It's American but has tasty recipes for all mealtimes including packed lunches. Gives a full calorie, fat etc. breakdown. And I've found a lot of their recipes are reasonably quick and simple to make.

We knew our diet had got out of hand when DH and I pinched a couple of DS's chips at lunch, hated the grease and realised we'd overdosed on bad food.
