Scallops - wasted in fish pie?

I'm really scraping the barrel food and money wise as it's the end of a tight month. Luckily I have a few bits in my freezer to last until Friday. One thing I've dug out is a fish pie mix - you know, chunks of cod, smoked haddock, etc. it's not a large amount, probs enough for one decent portion.

I've also found a bag of about six scallops my mum gave me ages ago. If I added them to the fish pie it would probably do two decent dinners. But is that a waste of fancy scallops? (Which I've never cooked before and would probably only cock up anyway!

Apologies for the uninteresting post!

Bulk out the fish pie with loads of grated carrot, celery and cheddar. I do the jamie o no poach method and it's so easy and delish and you can just add loads more veg if you haven't got much fish. The scallops will go borderline inedible!

I agree that the pie will overcook them, sorry Sad Bulking out with veg is the way to go.

Best way to cook them is to defrost them, then fry them with a little chorizo and serve with spaghetti. You only need to cook the scallops for a couple of minutes each side (depending on their thickness. If they are thin, cook them for a lot less). You don't need any pasta sauce, just mix the cooked pasta in with the oils from the chorizo and scallops in the frying pan. You can add a little cream and parsley if you want.

Oh thanks for the heads up - I didn't realise it would over cook them. I will bulk it with some sweet corn and carrot as I have those to hand.

And thanks for the delicious sounding recipe! It will be one for when I get paid I think as I have the grand total of about 87p until then. (Luckily got food, loo roll and petrol!)

Add some hard boiled eggs (halved) to the fish pie to bulk it out.

That's a nice idea for the scallops with pasta and chorizo, if you don't have any chorizo you could use diced bacon which is a classic combination with scallops.

Eggs would work. What about kedgeree? It's rice and fish. www.jamieoliver.com/recipes/fish-recipes/kedgeree
