I have a load of vegetables to use up and some time to cook today. Any suggestions for recipes that could use up the vegetables and be frozen or stored for future use would be much appreciated.
I have:
3 courgettes
1 cauliflower
1 head of broccoli
several peppers of different colours
Leeks
2 bags spinach
4 or 5 carrots
I have all the usual herbs, onions, garlic, ginger etc in the store cupboard. I have chicken legs, sausages, some slow cooked beef leftovers, eggs, cheese, stock, tinned tomatoes.
