I have loads of leftover chicken today and have made chicken pasta ( onions, red peppers, garlic fried with a tsp whole grain mustard and dollop of creme fraiche added at the end - chopped up chicken thrown in and added to pasta) delicious.
I'm doing a chicken soup this evening- I've taken remaining chicken off bones and used bones, bay, a carrot, celery and onion to make stock- once this is done ill cube a few carrots, potatoes, some sliced leeks and celery and fry in butter until soft , throw in some thyme if I find some, add a tablespoon of flour to the fried veg, then add chicken, and stock. Makes for a buttery creamy chicken soup. Can't wait.
I often make pie, with fried leeks, mushrooms, thyme, a dollop of creme fraiche and mustard, add chopped leftover chicken, put in a pie dish top with puff and bake for thirty mins.
Hfw has a vegetarian mushroom lasagne, in the veg! Book, which is amazing with added leftover chicken and bacon bits
I imagine all mushroom lasagne recipes would be similar and experience the same benefits with a bit of chicken thrown in
A pumpkin laksa is another beautiful vegetarian dish which is much improved with sliced leftover chicken.
I know it's not strictly a recipe- but good old chicken mayo sandwiches are a great leftover option- they're always over mayoed in the shops!
