Pancetta cubes

I've got a spare one of those little tubs of pancetta cubes, and I was wondering if anybody could give me any recipe inspiration for them...

I have a truly shit kitchen. No oven and a hob-plate with two spaces that are arranged in a way where you can't cook two things at once. Because of this, I normally cook one-pots.

In the past, I've used pancetta cubes in coq au vin and Italian bolognese. Would anybody help me out with some ideas?

Thanks in advance (it took me a long time to work out that there weren't actually a surprising amount of posters called Tia Blush).

Hmmm, I'm not a massive fan of Carbonara. But you're right, maybe if I do it the proper way I'll like it!

Warm mixed with green salad leaves and tomatoes, serve with warm crusty bread.

Cook them off, put them to the side scramble some eggs and sprinkle the pancetta on top.

Those are lovely ideas, but I think I'm looking for a main course... Might bear those in mind though.

I like a big dressed sald with pancetta cubes, fried potatoes and a fried egg. Also use them with pasta and home made pesto.

Fry them until crisp and put to one side. Then decide what you want to make and add it to that!!

Or you can fry them until crispy, then onion, garlic, sweet paprika, chicken, peppers and rice. One pot Spanish(ish) rice!

I fry mine, mix with white crab meat and put with pasta.

Sausage casserole!

Brown off some onions with pancetta cubes.

Add sausages (naice ones if not too expensive), cover with ham stock and red wine if you've got some (personally I often open a new one for the casserole!!). With about 15 mins (30 in slow cooker) add button mushrooms.

Serve with rice and bread, or with baked potatoes, or mash. Add carrots, broccoli, peas at the table.

This is one of our fave Sunday lunches!
